Steame
The Montreal hot dog (french: steamé), also known as a steamie, is one of several variations of hot dogs served as a fast food staple at restaurants and diners in Montreal and other parts of Quebec. In Montreal (and elsewhere in the province of Quebec), the hot dog buns used to prepare steamies are side loading, while a top loading (New England style) hot dog bun is used for toasted hot dogs. Montreal hot dogs are considered to be rather small and are generally sold for between $1.00 and $2.00 depending on the area of purchase and dressing. Popular brands include Lesters, Lafleur's, and Glatt's kosher. The city of Montreal did not permit street food carts from 1947 until 2011, leading to a proliferation of small "greasy spoon" restaurants which are variations on the classic Québécois ''casse-croute'' (snack bar) restaurants. These restaurants may serve hot dogs with fresh-cut fries (''patates frites'', often served "very brown and greasy"), '' poutine'', hamburgers, ''po ...

Michigan Hot Dog
A michigan hot dog, michigan red hot, or simply "michigan", is a steamed all-beef hot dog on a steamed bun topped with a meaty sauce, generally referred to as "michigan sauce", and is a specialty in and around Plattsburgh, New York. Origin There is no consensus on the origin of the michigan, which according to some sources is not capitalized. Eula and Garth Otis, who opened the first michigan stand in Plattsburgh, New York, in 1927, were originally from Michigan. According to ''Press-Republican'' columnist Gordie Little, a newspaper advertisement for the Otis's michigans appeared in 1927. Little calls the michigan "a cultural institution." According to ''Serious Eats'', the sauce recipe may have originated in Michigan, but "bears little resemblance to Detroit Coney sauce, with no offal and barely any Greek flavor, although the texture is similar to Flint sauce." Ingredients The sauces are varied; some can be tomato-based and may contain vinegar, brown sugar, and a blend of ...

Montreal-style Smoked Meat
Montreal-style smoked meat, Montreal smoked meat or simply smoked meat in Quebec (French: ''smoked-meat''; sometimes ''viande fumée'' or even ''bœuf mariné'': Literally “marinated beef”) is a type of kosher-style deli meat product made by salting and curing beef brisket with spices. The brisket is allowed to absorb the flavours over a week, is then hot smoked to cook through, and finally is steamed to completion. This is a variation on corned beef and is similar to pastrami. Preparation Although the preparation method may be similar to New York pastrami, Montreal smoked meat is cured in seasoning with more cracked peppercorns and savoury flavourings, such as coriander, garlic, and mustard seeds, and significantly less sugar. The recipe for Montreal steak seasoning is based on the seasoning mixture for Montreal smoked meat. Montreal smoked meat is made with variable-fat brisket, whereas pastrami is more commonly made with the fat-marbled navel/plate cut. Montreal smoked ...

Sauerkraut
Sauerkraut (; , "sour cabbage") is finely cut raw cabbage that has been fermented by various lactic acid bacteria. Hamburger Steak
Hamburg steak is a patty of ground beef. Made popular worldwide by migrating Germans, it became a mainstream dish around the start of the 19th century. It is similar to Salisbury steak. It is considered the origin of the ubiquitous hamburger, when, in the early 20th century, vendors began selling the Hamburg steak as a sandwich between bread. History The German equivalent of the Hamburg steak is the '' Frikadelle'', also known as a ''Frikadelle'' or ''Bulette'', which is known to have existed in the 17th century. In the late 19th century, the Hamburg steak became popular on the menus of many restaurants in the port of New York. This kind of fillet was beef ground by hand, lightly salted, often smoked, and usually served raw in a dish along with onions and bread crumbs. The oldest document that refers to the Hamburg steak in English is a Delmonico's Restaurant menu from 1873 that offered customers an 11-cent plate of Hamburg steak that had been developed by American chef Charle ...

Cuisine Of Quebec
The cuisine of Québec (also called "French Canadian cuisine" or "cuisine québécoise") is a national cuisine in the Canadian province of Québec. It is also cooked by Franco-Ontarians. Québec's cuisine is descended from 16th-century French cuisine and began to develop in New France from the labour-intensive nature of colonial life, the seasonality of ingredients and the need to conserve resources. It has been influenced by the province's history of fur trading and hunting, as well as Québec's winters, soil fertility, teachings from First Nations, British cuisine, American cuisine, historical trade relations and some immigrant cuisines. Québec is home to many unique dishes and is most famous for its poutine, ''tourtières'', ''pâté chinois'', pea soup, ''fèves au lard'', ''cretons'' and desserts such as '' grands-pères'', ''pouding chômeur'' and St. Catherine's taffy. Québec's unique dishes are the traditional fare of the holidays, as well as the ''temps des sucre ...

Coleslaw
Coleslaw (from the Dutch term ''koolsla'' meaning 'cabbage salad'), also known as cole slaw, or simply as slaw, is a side dish consisting primarily of finely shredded raw cabbage with a salad dressing or condiment, commonly either vinaigrette or mayonnaise. This dish originated in the Netherlands in the 18th century. Coleslaw prepared with vinaigrette may benefit from the long lifespan granted by pickling. History The term "coleslaw" arose in the 18th century as an anglicisation of the Dutch term "koolsla" ("kool" in Dutch sounds like "cole") meaning "cabbage salad". The "cole" part of the word ultimately derives from the Latin ''caulis'', meaning cabbage. The 1770 Dutch cookbook ''The Sensible Cook'' (Dutch: ''De Verstandige Kock'') contains a recipe attributed to the author's Dutch landlady, who mixed thin strips of cabbage with melted butter, vinegar, and oil. The recipe for coleslaw as it is most commonly prepared is fairly young, as mayonnaise was invented during t ...

Valentine (restaurant)
Valentine is a Canadian chain of over 100 privately owned restaurant franchises operating in the province of Quebec, Canada. In September 2010 it became a subsidiary of MTY Food Group which purchased the brand rights for $9.3 million. History The first restaurant opened in 1979 in Saint-Hyacinthe, Quebec. A few years later, its founder, Jean-Pierre Robin, opened a second restaurant in Saint-Hyacinthe in order to meet the demand for its "famous hot-dogs". The chain's success increases and becomes a turning point: the brothers opt for franchising as the company's mode of functioning for its future restaurants. As time passes, more franchises are bought and restaurants open throughout Quebec. During the 1990s, the chain underwent a major renewal plan in which the restaurants' design changed along with the company's colours. The company's fare is typical Canadian fast food, such as burgers, fries, sandwiches and poutine. The company employs humor in its advertising. It offers an app ...
