Sabzi polo ( fa, سبزی پلو) is an Iranian (Persian) dish of rice and chopped herbs, usually served with fish. In Persian, ''sabzi'' refers to herbs or vegetables (''sabz'' means "green"); ''polo'' is pilaf, a style of cooked rice. The herbs used in sabzi polo vary, but typically include coriander, dill, chives or scallions, fenugreek, garlic and parsley. It can be made from both fresh and dried herbs. Dill (''Anethum graveolens'') is an annual herb in the celery family Apiaceae. It is the only species in the genus ''Anethum''. Dill is grown widely in Eurasia, where its leaves and seeds are used as a herb or spice for flavouring food. Growth Dill grows up to , with slender hollow stems and alternate, finely divided, softly delicate leaves long. The ultimate leaf divisions are broad, slightly broader than the similar leaves of fennel, which are threadlike, less than broad, but harder in texture. Caspian Kutum
The Caspian kutum (''Rutilus kutum'') or Caspian white fish is a member of the family Cyprinidae from brackish water habitats of the Caspian Sea and from its freshwater tributaries. It is typically a medium-sized fish, reaching 45–55 cm in length, rarely 70 cm, and weighing up to 4.00 kg, rarely 5.00 kg. It used to be very common and was harvested commercially.
