Redbreast (whiskey)
Redbreast is a brand of single pot still Irish Whiskey produced by Irish Distillers. It was originally bottled by Gilbey's, a Dublin spirits merchant using distillate sourced from Jameson's Bow Street Distillery. In the 1980s, the brand was purchased by Irish Distillers, the producer of Jameson. It is the largest selling single pot still Irish whiskey in the world. As of 2020, there are six variants available: Redbreast 12 Year Old, Redbreast 12 Cask Strength, Redbreast 15 Year Old, Redbreast 21 Year Old, Redbreast Lustau Edition (matured for its final year in Bodegas Lustau sherry casks) and Redbreast 27 Year Old (New addition since March 2020). Pot Still
A pot still is a type of distillation apparatus or still used to distill liquors such as whisky or brandy. In modern (post-1850s) practice, they are not used to produce rectified spirit, because they do not separate congeners from ethanol as effectively as other distillation methods. Pot stills operate on a batch distillation basis (as contrasted with Coffey or column stills, which operate on a continuous basis). Traditionally constructed from copper, pot stills are made in a range of shapes and sizes depending on the quantity and style of spirit desired. Spirits distilled in pot stills top out between 60 and 80 percent alcohol by volume (ABV) after multiple distillations. Green Spot is a single pot still Irish whiskey, produced specifically for Mitchell & Son of Dublin by Irish Distillers at the Midleton Distillery in Cork, Ireland. Green Spot is one of the few remaining bonded Irish whiskeys. Along with Mitchell's three older offerings, Yellow Spot, Red Spot, and Blue Spot. Oloroso
Oloroso ("scented" in Spanish) is a variety of fortified wine (sherry) made in Jerez and Montilla-Moriles and produced by oxidative aging. It is normally darker than Amontillado. Oloroso is usually dark and nutty. Unlike the fino and Amontillado sherries, in oloroso the flor yeast is suppressed by fortification at an earlier stage. This causes the finished wine to lack the fresh yeasty taste of the fino sherries. Without the layer of flor, the sherry is exposed to air through the slightly porous walls of the American or Canadian oak casks and undergoes oxidative aging. As the wine ages, it becomes darker and stronger and is often left for many decades.
