Ohn No Khao Swè
Ohn no khao swè (; ) is a Burmese dish consisting of wheat noodles in a curried chicken and coconut milk broth thickened with gram flour (chickpea flour). The dish is often garnished with crisp fried bean fritters, sliced raw onions, chillies, crisp noodles, and slices of hard-boiled egg, and zested with lime or lemon juice and fish sauce. Due to the popular link between coconut milk and hypertension, a variation which uses evaporated milk instead of coconut milk is also available in certain restaurants. The rest of the ingredients are the same. A dry noodle form of this dish, called ''shwedaung khao swe'' (ရွှေတောင်ခေါက်ဆွဲ), consists of egg noodles tossed in a chicken curry cooked in coconut milk gravy. Khow Suey
''Khow suey'' (from my, ခေါက်ဆွဲ), is a noodle soup made of egg noodles and curried beef or chicken with coconut milk, served with a variety of contrasting condiments. Khao Soi
''Khao soi'' or ''khao soy'' ( th, ข้าวซอย, ; lo, ເຂົ້າຊອຍ , my, အုန်းနို့ခေါက်ဆွဲ ,) is a Chin Haw dish served in Laos and northern Thailand. A comparable dish, ''ohn no khao swè'', is widely served in Myanmar. The name means 'cut rice', although it is possible that it is simply a corruption of the Burmese word for noodles – "khao swè" – which may account for the variations. Evaporated milk, known in some countries as "unsweetened condensed milk", is a shelf-stable canned cow’s milk product where about 60% of the water has been removed from fresh milk. It differs from sweetened condensed milk, which contains added sugar. Sweetened condensed milk requires less processing to preserve since the added sugar inhibits bacterial growth.
