Moctezuma's Table
Moctezuma's table refers to both the place and the manner in which the Aztec emperor (Tlatoani) ate his food. Important chronologists were witnesses to this daily ritual. One of these, Bernal Díaz del Castillo, extrapolated in his book, '' The True History of the Conquest of New Spain (Historia verdadera de la conquista de la Nueva España),'' how the Mexicas specific protocols and etiquette were passed down from one generation to the next. The abundance of typical meals that were found in this daily banquet are largely reflected in today's Mexican cuisine. Moctezuma's table represents more than just Aztec cuisine and the perfection of great eating (buen comer) because it also demonstrates the prerogative that was required to create them. ''Tlatoani'' ( , "one who speaks, ruler"; plural ' or tlatoque) is the Classical Nahuatl term for the ruler of an , a pre-Hispanic state. It is the noun form of the verb "tlahtoa" meaning "speak, command, rule". As a result, it has been variously translated in English as "king", "ruler", or "speaker" in the political sense. Bernal Díaz Del Castillo
Bernal Díaz del Castillo ( 1492 – 3 February 1584) was a Spanish conquistador, who participated as a soldier in the conquest of the Aztec Empire under Hernán Cortés and late in his life wrote an account of the events. As an experienced soldier of fortune, he had already participated in expeditions to Tierra Firme, Cuba, and to Yucatán before joining Cortés. In his later years he was an encomendero and governor in Guatemala where he wrote his memoirs called '' The True History of the Conquest of New Spain''. He began his account of the conquest almost thirty years after the events and later revised and expanded it in response to the biography published by Cortés's chaplain Francisco López de Gómara, which he considered to be largely inaccurate in that it did not give due recognition to the efforts and sacrifices of others in the Spanish expedition. Francisco De Aguilar (conquistador)
Francisco de Aguilar (1479 — 1571?), born Alonso de Aguilar, was a Spanish conquistador who took part in the expedition led by Hernán Cortés that resulted in the conquest of the Aztec Empire and the fall of Tenochtitlan, the capital of the Aztec state in the central Mexican plateau. He was granted an ''encomienda'' after the conquest, but in 1529, eight years after the fall of Tenochtitlan, he gave up his ''encomienda'' and entered the Dominican Order, adopting the name ''Francisco''. Aguilar spent the remaining 40 years of his life as a Dominican friar. Nopal (from the Nahuatl word for the pads of the plant) is a common name in Spanish for ''Opuntia'' cacti (commonly referred to in English as ''prickly pear''), as well as for its pads. Tlacoyo
A tlacoyo is an oval-shaped Mexican dish of pre-Hispanic origin made of masa. Tlacoyos are thicker than fresh corn tortillas and are stuffed with cheese, fava beans, cooked ground beans, chicharron, and other ingredients before being fried or toasted. Tlacoyos can be served as an accompaniment to soups and stews or as appetizers for celebrations. Most traditional tlacoyos do not have lard or salt in the masa, and if not eaten soon after they are cooked, they become very tough and dry, even if reheated.
