Michael Field (food Writer)
Michael Field (February 21, 1915 – March 22, 1971) was an American food writer and critic. Earlier in his career he had been a concert pianist, but from 1964 until his death he concentrated on his work as an author and teacher of cooking. Early life and piano career Field was born in New York City. His mother died when he was three years old, and he was raised by William Calhoun, a piano teacher, and his wife. Field said that the latter "got him interested in cooking". Field was educated in New York, first at the George Washington High School and then, on a scholarship, at the Juilliard School of Music. Simone Beck
Simone "Simca" Beck (7 July 1904 – 20 December 1991) was a French cookbook writer and cooking teacher who, along with colleagues Julia Child and Louisette Bertholle, played a significant role in the introduction of French cooking technique and recipes into American kitchens. Early life She was born on 7 July 1904, in Tocqueville-en-Caux, near Dieppe in Normandy. Her family was rich because they had a business in production of Benedictine liqueur. When she was little, she liked helping her family cook to prepare desserts or entire meals. She spent some years learning bookbinding and being a sales representative, where she met her second husband, but subsequently Beck's career was devoted to food. In 1933, at the end of her marriage with Jacques Jarlaud, she applied for Le Cordon Bleu school in Paris. A garlic press, also known as a garlic crusher, is a kitchen utensil to crush garlic cloves efficiently by forcing them through a grid of small holes, usually with some type of piston. Many garlic presses also have a device with a matching grid of blunt pins to clean out the holes. The inventor of the garlic press is generally held to be Karl Zysset (1907–1988) founder of the Swiss kitchen utensil company Zyliss. Garlic presses present a convenient alternative to mincing garlic with a knife, especially because a clove of garlic can be passed through a sturdy press without even removing its peel. The peel remains in the press while the garlic is extruded out. Some sources also claim that pressing with the peel on makes cleaning the press easier. Garlic crushed by a press is generally believed to have a different flavor from minced garlic, more of garlic's strong flavor compounds are liberated. Elizabeth David
Elizabeth David CBE (born Elizabeth Gwynne, 26 December 1913 – 22 May 1992) was a British cookery writer. In the mid-20th century she strongly influenced the revitalisation of home cookery in her native country and beyond with articles and books about European cuisines and traditional British dishes. Born to an upper-class family, David rebelled against social norms of the day. In the 1930s she studied art in Paris, became an actress, and ran off with a married man with whom she sailed in a small boat to Italy, where their boat was confiscated. They reached Greece, where they were nearly trapped by the German invasion in 1941, but escaped to Egypt, where they parted. She then worked for the British government, running a library in Cairo. While there she married, but she and her husband separated soon after and subsequently divorced. Louisette Bertholle (26 October 1905 – 26 November 1999) was a French cooking teacher and writer, best known as one of the three authors (with Julia Child and Simone Beck) of the bestselling cookbook ''Mastering the Art of French Cooking''.
