List Of Sources Of Chinese Culinary History
This is a list of historical Chinese sources referring to Chinese cuisine. Not long after the expansion of the Chinese Empire during the Qin dynasty (221 BC–207 BC) and Han dynasty (202 BC–220 AD), Chinese writers noted the great differences in culinary practices among people from different parts of the realm. Chinese cuisine encompasses the numerous cuisines originating from China, as well as overseas cuisines created by the Chinese diaspora. Because of the Chinese diaspora and historical power of the country, Chinese cuisine has influenced many other cuisines in Asia and beyond, with modifications made to cater to local palates. Chinese food staples such as rice, soy sauce, noodles, tea, chili oil, and tofu, and utensils such as chopsticks and the wok, can now be found worldwide. Chajing
''The Classic of Tea'' or ''Tea Classic'' () is the first known monograph on tea in the world, by China, Chinese writer Lu Yu between 760 CE and 762 CE, during the Tang dynasty. Lu Yu's original manuscript is lost; the earliest editions available date to the Ming dynasty. According to tea lore, Lu Yu was an orphan of Jinling county (now Tianmen City in Hubei Province) who was adopted by a Buddhist monk of the Dragon Cloud Monastery. He refused to take up the monastic robes and was assigned menial jobs by his stepfather. Lu Yu ran away and joined the circus as a clown. At age 14, Lu Yu was discovered by the local governor Li Qiwu, who offered Lu Yu the use of his library and the opportunity to study with a teacher. Sun Simiao
Sun Simiao (; died 682) was a Chinese physician and writer of the Sui and Tang dynasty. He was titled as China's King of Medicine (, Yaowang) for his significant contributions to Chinese medicine and tremendous care to his patients. Books Sun wrote two books - ''Beiji qianjin yaofang'' ("Essential Formulas for Emergencies ortha Thousand Pieces/Catty of Gold") and ''Qian Jin Yi Fang'' ("Supplement to the Formulas of a Thousand Gold Worth") - that were both milestones in the history of Chinese medicine, summarizing pre-Tang dynasty medicine. The former listed about 5300 recipes for medicines, and the latter 2000. Beiji Qianjin Yaofang
''Beiji qianjin yaofang'' (), literally ''Essential Formulas Worth a Thousand in Gold for Emergencies'', is a Chinese medical text by Sun Simiao first published in 652. A sequel was published in 682. Contents Comprising thirty '' juan'' or scrolls, the text is primarily focused on medical disorders and their remedies. The introduction discusses medical diagnosis and treatment, while laying out a moral code for physicians. The remaining twenty-nine ''juan'' pertain to, among other things, gynaecology; "wind-induced disorders"; diseases experienced by women and children; "disorders of the seven orifices"; disorders of '' qi''; "cold damage disorders"; "wasting thirst" and hemorrhoids; detoxification; acupuncture and moxibustion. Ouyang Xun
Ouyang Xun (; 557–641), courtesy name Xinben (), was a Chinese calligrapher, politician, and writer of the early Tang dynasty. He was born in Hunan, Changsha, to a family of government officials; and died in modern Anhui province. Achievements He was a talented student who read widely in the classics. He served under the Sui dynasty in 611 as Imperial Doctor. He served under the Tang dynasty as censor and scholar at the Hongwen Academy. There he taught calligraphy. Yiwen Leiju
The ''Yiwen Leiju'' is a Chinese ''leishu'' encyclopedia completed by Ouyang Xun in 624 under the Tang. Its other contributors included Linghu Defen and Chen Shuda. It is divided into 47 sections and many subsections. It covers a vast number of subjects and contains many quotations from older works, which are well cited. The ''leishu'' () is a genre of reference books historically compiled in China and other East Asian countries. The term is generally translated as "encyclopedia", although the ''leishu'' are quite different from the modern notion of encyclopedia. The ''leishu'' are composed of sometimes lengthy citations from other works, and often contain copies of entire works, not just excerpts.
