Ukrainian cuisine is the collection of the various cooking traditions of the people of Ukraine, one of the largest and most populous European countries. It is heavily influenced by the rich dark soil (''chernozem'') from which its ingredients come and often involves many components. Traditional Ukrainian dishes often experience a complex heating process – "at first they are fried or boiled, and then stewed or baked. This is the most distinctive feature of Ukrainian cuisine". The national dish of Ukraine is ''borscht'', the well-known beet soup, of which many varieties exist. However, ''varenyky'' (boiled dumplings similar to pierogi) and a type of cabbage roll known as'' holubtsi'' are also national favourites and are a common meal in traditional Ukrainian restaurants. Dacha (restaurant)
Dacha ( zh, 鄉間別墅) is a Ukrainian and Eastern European restaurant and bar in Hong Kong. It was founded by Olena Smith and Oksana Shevchuk, sisters from Ukraine, who came to Hong Kong in 2005. Having found the local supply of Eastern European food insufficient in Hong Kong, in 2012, the sisters started their own online store ''Xytorok'' for Russian-style produce. Apart from importing ingredients from Ukraine, they offered fresh sour cream, cheeses, cakes and pelmeni. In 2015, they expanded their business into opening ''Dacha'', an Eastern European restaurant in Central, Hong Kong. The menu of the restaurant includes such dishes as vegetarian borsht, chicken Kiev, herring under a fur coat, home-made kielbasa, cabbage rolls, blini with caviar, medovik made of buckwheat honey, etc. It also offers a variety of dumplings including Russian pelmeni, Polish pierogi and South Caucasian manti. Kiev Restaurant
The Kiev Restaurant (also known as the Kiev Diner or simply The Kiev) was a Ukrainian restaurant located in the East Village section of New York City. Founded in 1978 by Soviet emigrant to the United States Michael Hrynenko (1954–2004), the site was the former location of Louis Auster's Candy Shop, who was one of the original creators of the egg cream. Kiev for most of its existence was open for business 24 hours a day, 7 days a week. It was located at 117 Second Avenue, on the southwest corner of the intersection of Second Avenue and Seventh Street. At one time, the area was known as the "Pierogi Belt" because of the large number of Ukrainian restaurants; by 2007, only a few remained, such as Veselka.
