Rice production in Thailand represents a significant portion of the Thai economy and labor force. In 2017, the value of all Thai rice traded was 174.5 billion baht, about 12.9% of all farm production. Of the 40% of Thais who work in agriculture, 16 million of them are rice farmers by one estimate. Thailand has a strong tradition of rice production. It has the fifth-largest amount of land under rice cultivation in the world and is the world's second largest exporter of rice. Rice production in Laos is important to the national economy and food supply. Rice is a key staple for Laos, and over 60% of arable land is used for its cultivation. Only around 4% of Laos’ total area is arable, which is the smallest amount of arable land of any country in Southeast Asia, due its mountainous terrain (see Geography of Laos). Rice is primarily produced in the country’s lowland areas, with only approximately 11% of production taking place in highland areas. Khao Soi
''Khao soi'' or ''khao soy'' ( th, ข้าวซอย, ; lo, ເຂົ້າຊອຍ , my, အုန်းနို့ခေါက်ဆွဲ ,) is a Chin Haw dish served in Laos and northern Thailand. A comparable dish, ''ohn no khao swè'', is widely served in Myanmar. The name means 'cut rice', although it is possible that it is simply a corruption of the Burmese word for noodles – "khao swè" – which may account for the variations. Traditionally, the dough for the rice noodles is spread out on a cloth stretched over boiling water. After steaming the large sheet noodle is then rolled and cut with scissors. Lao khao soi is traditionally made with hand sliced rice noodles in clear soup broth and topped with minced pork. In some markets in Luang Namtha and Muang Sing vendors still hand cut the noodles.
