Dingle Peninsula Cheese
Dingle (Irish: ''An Daingean'' or ''Daingean Uí Chúis'', meaning "fort of Ó Cúis") is a town in County Kerry, Ireland. The only town on the Dingle Peninsula, it sits on the Atlantic coast, about southwest of Tralee and northwest of Killarney. Principal industries in the town are tourism, fishing and agriculture: Dingle Mart (livestock market) serves the surrounding countryside. In 2016 Dingle had a population of 2,050 with 13.7% of the population speaking Irish on a daily basis outside the education system. Dingle is situated in a ''Gaeltacht'' region. Cratloe Hills
Cratloe () is a village in County Clare, Ireland, situated between Limerick and Shannon in the mid-west of Ireland. It is possible that the name derives from ''Croit-shliabh'' meaning "hump-backed hill", referring to Woodcock Hill. The present-day parish of Cratloe consists of the former parish of Kilfintinan and a portion of the contemporary parish of Killeely. This was agreed upon by priests in the 18th century, who claimed there were not enough members of the clergy to operate fully in both parishes. Corleggy Cheese
Corleggy Cheeses is an Irish cheese producer in County Cavan. It was started by Silke Cropp in 1985 using milk from her own goat herd. Today Corleggy make a variety of different cheese from goat's milk, sheep's milk and cow's milk sourced from local farmers. Varieties Corleggy make two varieties of goat's cheese, one variety of sheep's cheese and five varieties of cow's cheese marketed under the "Drumlin" brand. The herds graze on neighbouring farms on drumlin pastures along the River Erne. The goat's cheese is made from pasteurised milk while the range of cow's cheese is made with raw milk. Vegetarian rennet is used, and for some varieties seawater is used to wash the cheese in salt water and helps form the edible rind. Cooleeney Farmhouse Cheese
Cooleeney Farm produces a number of cheeses from both cow's milk and goat's milk from their premises near Thurles in County Tipperary, Ireland. The Maher family are fourth generation farmers who use the milk from their own pedigree Friesian dairy herd to make their range of cheeses. All Cooleeney Farm cheeses are made with vegetarian rennet. Range Cooleeney Farm produce a range of seven cheeses. Five are made using cow's milk from their own farm, one from goat's milk from their own farm, and one using goat's milk from a nearby source.
