George Speck
George Speck (also known as George Crum;Hugh Bradley, ''Such Was Saratoga'', New York: 1940 July 15, 1824 – July 22, 1914) was an American chef. He was known for his role in popularizing potato chips in Upstate New York and was later mythologized as their creator. Speck was born in Saratoga County, New York. He was a member of the Mohawk people and likely also had African-American ancestry. He worked as a hunter, guide and cook in the Adirondack Mountains, becoming noted for his culinary skills after being hired at Moon's Lake House near Saratoga Springs. His specialties included wild meat, especially venison and duck. Speck later left Moon's and opened his own restaurant, Crum's, in nearby Malta. His establishment was popular among wealthy tourists and his reputation spread outside the Adirondacks. Saratoga County is a county in the U.S. state of New York, and is the fastest-growing county in Upstate New York. As of the 2020 U.S. census, the county's population was enumerated at 235,509, representing a 7.2% increase from the 2010 population of 219,607, representing one of the fastest growth rates in the northeastern United States. William Kitchiner
William Kitchiner M.D. (1775–1827) was an English optician, amateur musician and cook. A celebrity chef, he was a household name during the 19th century, and his 1817 cookbook, '' The Cook's Oracle'', was a bestseller in the United Kingdom and the United States. The origin of the crisp (also known as potato chip) is attributed to Kitchiner, with ''The Cook's Oracle'' including the earliest known recipe. Unlike most food writers of the time he cooked the food himself, washed up afterwards, and performed all the household tasks he wrote about. He travelled around with his ''portable cabinet of taste'', a folding cabinet containing his mustards and sauces. He was also the creator of Wow-Wow sauce.
