Gastrophysics
Gastrophysics (gastronomical physics) is an emerging interdisciplinary science that employs principles from physics and chemistry to attain a fundamental understanding of the worlds of gastronomy and cooking. Gastrophysical topics of interest include investigations of the raw materials of food, the effects of food preparation, and quantitative aspects of the physical basis for food quality, flavour, appreciation and absorption in the human body. Definition and aim Gastrophysics is a scientific discipline that focuses on investigations of aspects of gastronomy and cooking that relates to phenomena, which can be described and explained in a frame of physics, physical chemistry, chemistry, and associated sciences. Chemesthesis
Chemesthesis is the chemical sensitivity of the skin and mucous membranes. Chemesthetic sensations arise when chemical compounds activate receptors associated with other senses that mediate pain, touch, and thermal perception. These chemical-induced reactions do not fit into the traditional sense categories of taste and smell. Examples of chemesthetic sensations include the burn-like irritation from capsaicin and related compounds in foods like chili peppers; the coolness of menthol in mouthwashes and topical analgesic creams; the stinging or tingling of carbonated beverages in the nose and mouth; the tear-induction of cut onions; and the pungent, cough-inducing sensation in the back of the throat elicited by the oleocanthal in high-quality extra virgin olive oil. Charles Spence
Charles Spence is an experimental psychologist at the University of Oxford. He is the head of the Crossmodal Research group which specializes in the research about the integration of information across different sensory modalities. He also teaches Experimental Psychology to undergraduates at Somerville College. He is currently a consultant for a number of multinational companies advising on various aspects of multisensory design. Peter Barham
Peter Barham (born 1950) is emeritus professor of physics at the University of Bristol. He was visiting professor of Molecular Gastronomy at the University of Copenhagen, Denmark. Early life Peter Barham was born in 1950. He received his BSc from the University of Warwick, and his MSc and PhD from the University of Bristol. Career Peter Barham's research at the University of Bristol is concerned with polymer physics. He found ways to connect his research with his love of penguins, including the creation of silicon-based flipper bands which can be used for monitoring penguin populations. Nicholas Kurti
Nicholas Kurti, ( hu, Kürti Miklós) (14 May 1908 – 24 November 1998) was a Kingdom of Hungary, Hungarian-born British physicist who lived in Oxford, UK, for most of his life. Career Born in Budapest, Kurti went to high school at the Minta Gymnasium, but due to Anti-Semitism, anti-Jewish laws he had to leave the country, gaining his master's degree at the University of Paris, Sorbonne in Paris. He obtained his doctorate in low-temperature physics in University of Berlin, Berlin, working with Professor Francis Simon, Franz Simon. Kurti and Simon continued to work together during 1931–1933 at the Technische Hochschule in Breslau. However, when Adolf Hitler rose to power, both Simon and Kurti left Germany, joining the Clarendon Laboratory in the University of Oxford, England.
