Fish heads, either separated or still attached to the rest of the fish, are sometimes used in culinary dishes, or boiled for Fish stock (food), fish stock. Lower Jaw
In anatomy, the mandible, lower jaw or jawbone is the largest, strongest and lowest bone in the human facial skeleton. It forms the lower jaw and holds the lower teeth in place. The mandible sits beneath the maxilla. It is the only movable bone of the skull (discounting the ossicles of the middle ear). It is connected to the temporal bones by the temporomandibular joints. Conger

Caldillo De Congrio
Caldillo de congrio (Spanish for cusk-eel stock) is a Chilean fish soup. The dish is made of congrio Dorado (pink cusk-eel) or Colorado (red cusk-eel), a cusk-eel species common in the Chilean Sea. The dish is made by boiling together fish heads, onion, garlic, coriander, carrots and pepper. Once these are boiled, only the stock is used. Onion and garlic are fried together with chopped tomatoes. The vegetables are mixed then with the stock, cream, boiled potatoes and marinated and boiled conger. "Fish Heads" is a novelty song by comedy rock duo Barnes & Barnes, released as a single in 1978 and later featured on their 1980 album '' Voobaha''. It is the most requested song on the Dr. Demento radio show, and a music video for the song made in 1980 was in regular rotation on MTV. The song was featured on Barnes & Barnes' 1982 ''Fish Heads (Greatest Hits)'' 12-inch on Rhino Records. The lyrics are an absurdist celebration of fish heads, describing them in the high-pitched chorus as "roly poly" and delicious to eat. The verses describe various things they (mostly) cannot do such as play baseball, wear sweaters, and play the drums.
