''English Bread and Yeast Cookery'' is an English cookery book by Elizabeth David, first published in 1977. The work consists of a history of bread-making in England, improvements to the process developed in Europe, an examination of the ingredients used and recipes of different types of bread. Background and writing history The food writer Elizabeth David had published six books and several booklets before 1977. Her first works had been about the foods of the Mediterranean, France and Italy, but she had also begun to write about English cuisine; her first book on the subject was the 1970 work ''Spices, Salt and Aromatics in the English Kitchen''. Elizabeth David
Elizabeth David CBE (born Elizabeth Gwynne, 26 December 1913 – 22 May 1992) was a British cookery writer. In the mid-20th century she strongly influenced the revitalisation of home cookery in her native country and beyond with articles and books about European cuisines and traditional British dishes. Born to an upper-class family, David rebelled against social norms of the day. In the 1930s she studied art in Paris, became an actress, and ran off with a married man with whom she sailed in a small boat to Italy, where their boat was confiscated. They reached Greece, where they were nearly trapped by the German invasion in 1941, but escaped to Egypt, where they parted. She then worked for the British government, running a library in Cairo. While there she married, but she and her husband separated soon after and subsequently divorced. His scholarship focused on three main projects: ''The Mediterranean'' (1923–49, then 1949–66), ''Civilization and Capitalism'' (1955–79), and the unfinished ''Identity of France'' (1970–85). Sir Allen Lane (born Allen Lane Williams; 21 September 1902 – 7 July 1970) was a British publisher who together with his brothers Richard and John Lane founded Penguin Books in 1935, bringing high-quality paperback fiction and non-fiction to the mass market. The Assize of Bread and Ale ( la, Assisa panis et cervisiae) was a 13th-century law in high medieval England, which regulated the price, weight and quality of the bread and beer manufactured and sold in towns, villages and hamlets. It was the first law in British history to regulate the production and sale of food. At the local level, this resulted in regulatory licensing systems, with arbitrary recurring fees, and fines and punishments for lawbreakers (see amercement). In rural areas, the statute was enforced by manorial lords, who held tri-weekly court sessions. Jane Grigson (born Heather Mabel Jane McIntire; 13 March 1928 – 12 March 1990) was an English cookery writer. In the latter part of the 20th century she was the author of the food column for ''The Observer'' and wrote numerous books about European cuisines and traditional British dishes.
