Dunkel, or Dunkles, is a word used for several types of dark German lager. ''Dunkel'' is the German word meaning ''dark'', and dunkel beers typically range in color from amber to dark reddish brown. They are characterized by their smooth malty flavor. In informal terms, such as when ordering at a bar, "dunkel" is likely to mean whatever dark beer the bar has on tap, or sells most of; in much of north and western Germany, especially near Düsseldorf, this may be Altbier. In Bavaria, Dunkel, along with helles, is a traditional style brewed in Munich and popular throughout Bavaria. With alcohol concentrations of 4.5% to 6% by volume, dunkels are weaker than Doppelbocks, another traditional dark Bavarian beer. Paulaner
Paulaner is a German brewery, established in 1634 in Munich by the Minim friars of the ''Neudeck ob der Au'' cloister. The mendicant order and the brewery are named after Francis of Paola, the founder of the order. Paulaner is one of the six breweries who provide beer for Oktoberfest. Paulaner ranks number six among Germany's best-selling beers. History The monks in the Neudeck ob der Au Monastery in Munich brewed a strong beer, the Paulaner Salvator, naturally according to the Purity Law of 1516. Whatever they did not drink themselves was given to the poor or sold in the cloister pub. As ever-larger numbers of people in Munich began drinking the beer, civilian brewers voiced their complaints to the city council on February 24, 1634, about competition from the monastery. Hacker-Pschorr is a brewery in Munich, formed in 1972 out of the merger of two breweries, Hacker and Pschorr. Hacker was founded in 1417, nearly a century before the enactment of the ''Reinheitsgebot'' beer purity law of 1516. As one of six breweries located within Munich's city limits, its beers are among those served at Oktoberfest. The Klosterbrauerei Andechs is a monastic brewery in Andechs, Upper Bavaria, Germany, well known for its Andechser beers. The brewery is run by the monks of Andechs Abbey, a priory of St. Boniface's Abbey, a Benedictine abbey situated 40 km away in Munich. Aktienbrauerei Kaufbeuren is the oldest brewery in Swabia, Germany, the first written record about it is from 1308. Its legal form is a joint stock company with shares traded at Börse München. History A document from 1308 records that Heinrich der Twinger – a Kaufbeuren citizen – bequeathed all his property to the town's Holy Ghost Hospice including his brewhouse. This formed the basis of what became the Aktien brewery in Kaufbeuren. The name changed over the centuries as it bought up other producers, with its current name dating back to 1920. ''Aktienbrauerei'' means literally "share brewery", meaning that it is owned by its shareholders.
