Christian Habeck Farm, also known as the Abraham Brubaker Farm, is a historic farm and national historic district located at East Hempfield Township, Lancaster County, Pennsylvania. The district includes 12 contributing buildings. They include the brick farmhouse, a frame Pennsylvania bank barn (1869), spring house (c. 1876), two frame tobacco barns (c. 1920), a brick tenant house (c. 1880), a summer kitchen (c. 1876), a pigsty (c. 1900), a milk house, and a creamery (c. 1910). Spring House
A spring house, or springhouse, is a small building, usually of a single room, constructed over a spring. While the original purpose of a springhouse was to keep the spring water clean by excluding fallen leaves, animals, etc., the enclosing structure was also used for refrigeration before the advent of ice delivery and, later, electric refrigeration. The water of the spring maintains a constant cool temperature inside the spring house throughout the year. Food that would otherwise spoil, such as meat, fruit, or dairy products, could be kept there, safe from animal depredations as well. Creamery
A creamery is a place where milk and cream are processed and where butter and cheese is produced. Cream is separated from whole milk; pasteurization is done to the skimmed milk and cream separately. Whole milk for sale has had some cream returned to the skimmed milk. The creamery is the source of butter from a dairy. Cream is an emulsion of fat-in-water; the process of churning causes a phase inversion to butter which is an emulsion of water-in-fat. Excess liquid as buttermilk is drained off in the process. Modern creameries are automatically controlled industries, but the traditional creamery needed skilled workers. Traditional tools included the butter churn and Scotch hands.
