Chapter One (restaurant)
Chapter One is a restaurant in Parnell Square in Dublin, Ireland. It is a fine dining restaurant that has been awarded one Michelin star from 2007 to present. The Michelin Guide awarded the restaurant the "Red M", indicating 'good food at a reasonable price', in the period 1996–2001. The restaurant is located in the basement of the Dublin Writers Museum and the Irish Writers’ Centre. The name of the restaurant refers to that. In 2007 and 2008 the restaurant was completely renovated and modernised. New rules for hygiene and working conditions made that necessary. On May 21, 2021, The Irish Times announced that chef Mickael Viljanen had entered into a business partnership with head chef and owner Ross Lewis, and would take over as the head chef of Chapter One. Ross Lewis (chef)
Ross Lewis (Bishopstown, 1965) is an Irish Michelin-star-winning head chef and co-owner of the restaurant Chapter One. Lewis grew up on a farm and went on to study Dairy Science at University College Cork. He discovered cooking as a living while working on a student visa in the United States. He later went to London to learn the trade of a chef. Through a schoolmate he found a job at the restaurant Odin's, owned by Peter Langan. From there he went on to Dolphin Brasserie as junior manager and to Le Chat Botté Restaurant at the Beau Rivage Hotel in Geneva, Switzerland. He came back in Ireland in 1990 and some time later took the chance of taking over Chapter One in the Dublin Writers Museum. The restaurant started trading in 1992. The Michelin Guides ( ) are a series of guide books that have been published by the French tyre company Michelin since 1900. The Guide awards up to three Michelin star (classification), stars for excellence to a select few establishments. Parnell Square
Parnell Square () is a Georgian square sited at the northern end of O'Connell Street in the city of Dublin, Ireland. It is in the city's D01 postal district. Formerly named ''Rutland Square'', it was renamed after Charles Stewart Parnell (1846–1891), as was Parnell Street, which forms the southern side of the square. Surrounded on three sides by terraces of original intact Georgian houses, much of the southern part of the square and its centre is taken up by extensions of the Rotunda Hospital while the Garden of Remembrance is located along the northern side of this area. Dublin Writers Museum
The Dublin Writers Museum was opened in November 1991 at No 18, Parnell Square, Dublin, Ireland. The museum occupies an original 18th-century house, which accommodates the museum rooms, library, gallery, and administration area. The annexe behind it has a coffee shop and bookshop on the ground floor and exhibition and lecture rooms on the floors above. Dublin stuccatore Michael Stapleton decorated the upstairs gallery. The Irish Writers' Centre, next door in No 19, contains the meeting rooms and offices of the Irish Writers' Union, the Society of Irish Playwrights, the Irish Children's Book Trust and the Irish Translators' & Interpreters' Association.
