Classic Malts Of Scotland
The Classic Malts of Scotland is a selection of six single malt whiskies, launched and marketed together in 1988 by United Distillers and Vintners which is now owned by Diageo. They are often displayed together in bars and liquor stores. Diageo has since marketed other single malt labels and expressions with the Classic Malts labeling. The six original malts are: UDV's regions differ from the more conventional categorisations of Highland (and subregion Island), Lowland, Speyside, Campbeltown, and Islay. The region of West Highland was created to separate between Oban and Dalwhinnie. Talisker is the only distillery on the Isle of Skye, which has never been a whisky region unto itself, but would be in the Island subregion; though this categorisation enabled UDV to include both Talisker and Lagavulin, strongly flavoured malts with strong followings. Single Malt Scotch
Single malt Scotch refers to single malt whisky made in Scotland. To qualify for this category, a whisky must have been distilled at a single distillery using a pot still distillation process and made from a mash of malted barley. Therefore, a single malt means that the whisky has not been blended elsewhere with whisky from other distilleries. As with any Scotch whisky, a single malt Scotch must be distilled in Scotland and matured in oak casks in Scotland for at least three years, although most single malts are matured longer. Definitions * "Malt" indicates that the whisky is distilled from a "malted" barley. Malting calls for soaking the grains in water for several days until it germinates. Heat is then applied to stop the germination, often using peat as the fuel. Other grains, such as rye or wheat, can be malted for other types of whisky, but barley must be used for single malt Scotch. Island single malts are the single malt Scotch whiskies produced on the islands around the perimeter of the Scottish mainland. The islands (excluding Islay) are not recognised in the Scotch Whisky Regulations as a distinct whisky producing region, but are considered to be part of the Highland region. Islay is itself recognised as a distinct whisky producing region (see Islay whisky). Other sources, however, indicate that the Islands, excluding Islay, constitute a sixth distinct region. This unofficial region includes the following whisky-producing islands: Arran, Jura, Mull, Orkney, and Skye: with their respective distilleries: Arran, Jura, Tobermory, Highland Park, Scapa and Talisker. Pedro Ximénez
Pedro Ximénez (also known as PX and many other variations) is the name of a white Spanish wine grape variety grown in several Spanish wine regions but most notably in the '' denominación de origen'' (DO) of Montilla-Moriles. Here it is used to produce a varietal wine, an intensely sweet, dark, dessert sherry. Fino ("refined" in Spanish) is the driest and palest of the traditional varieties of sherry and Montilla-Moriles fortified wine. They are consumed comparatively young and, unlike the sweeter varieties, should be consumed soon after the bottle is opened as exposure to air can cause them to lose their flavour within hours. Flor The defining component of Fino sherries is the strain of yeast known as flor that floats in a layer on top of sherry in the wine barrel. Until the mid-19th century most sherry winemakers did not understand what this yellowish foam that randomly appeared in some of their barrels was. Amontillado () is a variety of sherry wine characterised by being darker than fino but lighter than oloroso. It is named after the Montilla region of Spain, where the style originated in the 18th century, although the name "Amontillado" is sometimes used commercially as a simple measure of colour to label any sherry lying between a fino and an oloroso. Oloroso
Oloroso ("scented" in Spanish) is a variety of fortified wine (sherry) made in Jerez and Montilla-Moriles and produced by oxidative aging. It is normally darker than Amontillado. Oloroso is usually dark and nutty. Unlike the fino and Amontillado sherries, in oloroso the flor yeast is suppressed by fortification at an earlier stage. This causes the finished wine to lack the fresh yeasty taste of the fino sherries. Without the layer of flor, the sherry is exposed to air through the slightly porous walls of the American or Canadian oak casks and undergoes oxidative aging. As the wine ages, it becomes darker and stronger and is often left for many decades.
