Caso Peruto
Caso peruto, sometimes written as Casoperuto, is a round Italian goat milk cheese. It produced from January to July in the town of Sessa Aurunca (Caserta) and is dated to the time of Pliny (1st century AD). It is rubbed with oil and vinegar before being stored in clay containers or glass jars and aged in a cellar for months, during which it is periodically washed with vinegar. It is greyish robust taste. It is listed on the Ark of Taste. Goat milk is the milk of domestic goats. Goats produce about 2% of the world's total annual milk supply. Some goats are bred specifically for milk. Goat milk naturally has small, well-emulsified fat globules, which means the cream will stay in suspension for a longer period of time than cow's milk; therefore, it does not need to be homogenized. Eventually, the cream will rise to the top over a period of a few days. Sessa Aurunca
Sessa Aurunca is a town and ''comune'' in the province of Caserta, Campania, southern Italy. It is located on the south west slope of the extinct volcano of Roccamonfina, by rail west north west of Caserta and east of Formia. It is situated on the site of ancient Suessa Aurunca, near the river Garigliano. The hill on which Sessa lies is a mass of volcanic tuff. Toponym The name Sessa comes from '' Colonia Julia Felix Classica Suessa'' (or in short S.P.Q.S."Suessa"), a city belonging to the ancient Auruncan Pentapolis, which is the historic core of the downtown.
