Bún Mắm
''Bún mắm'' is a fermented thick Vietnamese vermicelli soup sometimes called "Vietnamese gumbo." Etymology Food reviewer Mike Sula explains, "''Bun'' refers to the steamed rice vermicelli, which can be a bit mushy. But the key to this soup is the ''mam'', as in ''mam ca loc'' (fermented fish paste) or ''mam tom'' (fermented shrimp paste), a murky purple slurry that on its own is one of the most odoriferous substances this side of a tannery fire. But added judiciously to soups or stir-fries it provides the elusive element of deep rounded flavor that puts the ''mam'' in ''umami''." In the United States Food critic Mike Sula described the ''bún mắm'' in a restaurant, Nha Hang Viet Nam, in Chicago's West Argyle Street Historic District (also known as Little Vietnam): " recommend you fill your soup requirement with the ''bun mam'', a.k.a. Umami ( from ja, 旨味 ), or savoriness, is one of the five basic tastes. It has been described as savory and is characteristic of broths and cooked meats. People taste umami through taste receptors that typically respond to glutamates and nucleotides, which are widely present in meat broths and fermented products. Glutamates are commonly added to some foods in the form of monosodium glutamate (MSG), and nucleotides are commonly added in the form of disodium guanylate, inosine monophosphate (IMP) or guanosine monophosphate (GMP). Since umami has its own receptors rather than arising out of a combination of the traditionally recognized taste receptors, scientists now consider umami to be a distinct taste.
