Barrio Mexican Kitchen & Bar, or simply Barrio, is a Mexican restaurant in Seattle, in the U.S state of Washington. The restaurant is owned by Heavy Restaurant Group, which previously operated a second Barrio location in Bellevue. Description Barrio is a Mexican restaurant on Capitol Hill. Thrillist says the business serves agave and "offers a modern approach to Mexican cuisine that's inspired by Pacific Northwestern flavors and seasonal ingredients -- from freshly caught seafood and locally sourced beef to wild mushrooms and vegan cheeses". In 2014, Sara Billups of '' Eater Seattle'' described Barrio as a "stylish Capitol Hill Mexican spot". In 2015, the website's Megan Hill said the restaurant has a "slightly upscale twist on Mexican flavors". The brunch menu has included carnitas and pancakes, pork belly benedict, burritos, and tacos. Mexican Cuisine
Mexican cuisine consists of the cooking cuisines and traditions of the modern country of Mexico. Its earliest roots lie in Mesoamerican cuisine. Its ingredients and methods begin with the first agricultural communities such as the Olmec and Maya who domesticated maize, created the standard process of maize nixtamalization, and established their foodways. Successive waves of other Mesoamerican groups brought with them their own cooking methods. These included: the Teotihuacanos, Toltec, Huastec, Zapotec, Mixtec, Otomi, Purépecha, Totonac, Mazatec, Mazahua, and Nahua.
