Apple Pie
An apple pie is a fruit pie in which the principal filling ingredient is apples. The earliest printed recipe is from England. Apple pie is often served with whipped cream, ice cream ("apple pie à la mode"), or cheddar cheese. It is generally double-crusted, with pastry both above and below the filling; the upper crust may be solid or latticed (woven of crosswise strips). The bottom crust may be baked separately ("Blind-baking, blind") to prevent it from getting soggy. Deep-dish apple pie often has a top crust only. Tarte Tatin is baked with the crust on top, but served with it on the bottom. The tarte Tatin (), named after the Tatin sisters who invented it and served it in their hotel as its signature dish, is a pastry in which the fruit (usually apples) is caramelized in butter and sugar before the tart is baked. It originated in France but has spread to other countries over the years. History The tarte Tatin was created accidentally at the Hôtel Tatin in Lamotte-Beuvron, Loir-et-Cher, south of Paris, in the 1880s. The hotel was run by two sisters, Stéphanie and Caroline Tatin. The McIntosh ( ), McIntosh Red, or colloquially the Mac, is an apple cultivar, the national apple of Canada. The fruit has red and green skin, a tart flavour, and tender white flesh, which ripens in late September. In the 20th century it was the most popular cultivar in Eastern Canada and New England, and is considered an all-purpose apple, suitable both for cooking and eating raw. John McIntosh discovered the original McIntosh sapling on his Dundela farm in Upper Canada in 1811. He and his wife cultivated it, and the family started grafting the tree and selling the fruit in 1835. The Granny Smith, also known as a green apple or sour apple, is an apple cultivar which originated in Australia in 1868. It is named after Maria Ann Smith, who propagated the cultivar from a chance seedling. The tree is thought to be a hybrid of ''Malus sylvestris'', the European wild apple, with the domesticated apple ''Malus domestica'' as the polleniser. The Northern Spy, also called 'Spy' and 'King', is a cultivar of domesticated apple that originated on the farm of Oliver Chapin in East Bloomfield, New York, in about 1840. It is popular in upstate New York. The Northern Spy was one of four apples honored by the United States Postal Service in a 2013 set of four 33¢ stamps commemorating historic strains, joined by Baldwin, Golden Delicious, and Granny Smith. Description Northern Spy produces fairly late in the season (late October and beyond). Skin color is a green ground, flushed with red stripes where not shaded. Empire is the name of a clonally propagated cultivar of apple derived from a seed grown in 1945 by Lester C. Anderson, a Cornell University fruit nutritionist who conducted open pollination research on his various orchards. In 1945, under the direction of A. J. Heinicke, scientists from the New York State Agricultural Experiment Station of Cornell University in Geneva, New York, harvested the Empire seed together with thousands of its siblings. Cortland is a cultivar of apple developed at the New York State Agricultural Experiment Station in Geneva, New York, United States in 1898. The apple was named after nearby Cortland County, New York. It is among the fifteen most popular in the United States and Canada. Gala is an apple cultivar with a sweet, mild flavour, a crisp but not hard texture, and a striped or mottled orange or reddish appearance. Originating from New Zealand in the 1930s, similar to most named apples, it is clonally propagated. Braeburn
The Braeburn is a cultivar of apple that is firm to the touch with a red/orange vertical streaky appearance on a yellow/green background. Its color intensity varies with different growing conditions.
