Aisy-sous-Thil
Aisy-sous-Thil (, literally ''Aisy under Thil'') is a commune in the Côte-d'Or department in the Bourgogne-Franche-Comté region of eastern France. Geography Aisy-sous-Thil is about 35 km south-east of Avalon and about 25 km south of Montbard. The Route d'Avalon, (Highway D70) passes directly through the heart of the commune from Avalon in the west to Vitteaux in the east although it does not pass through the village. The village is north of the D70 and can be reached by the Highway D15J off the D70. The Highway D15J passes out of the commune to the south-west and links to Lacour-d'Arcenay. Highway D980 also links with the D70 in the south-east corner of the commune. Highway D36 proceeds north out of the commune. The Autoroute du Soleil (A6/E15) passes about 2 km to the east of the commune. Most of the commune is farmland with some forests in the south-west and north-west. Morvan Regional Natural Park
Morvan Regional Natural Park (French: ''Parc naturel régional du Morvan'') is a protected area of woodlands, lakes and traditional farmland in the Bourgogne-Franche-Comté region of central France. It covers a total area of and extends through four different departments with the majority being in Nièvre. The area was officially designated as a regional natural park in 1970. The ''maison du parc'' (main visitors center) is located in the small commune of Saint-Brisson. It maintains one of the park's six natural history museums (''Écomusée de Morvan''). Aisy Cendré
Aisy cendré (french: Ashen Aisy; named after Aisy-sous-Thil, a nearby town) is a French cheese made from cow milk, made by a company in Époisses, Bourgogne (Burgundy, a region in France). It has a washed rind, contains at least 50% fat and has an average weight of 230 grams, with a diameter of 110 mm and a height of 35 mm. Its paste has a slightly smoked aroma and ripens into a soft texture, but is typically eaten while still firm. It is refined for two weeks by scrubbing the rind and is then rolled in wood ash, giving it a greyish color. Production of Aisy cendré was 7 tonnes in 1991. Being made in Époisses, it profits from the reputation of the town's fabrication techniques, even though its preparation is very different from the other cheeses found there.
